How to make Sushi Rice

Ingredients:

● 2 cups sushi rice (short-grain Japanese rice)
● 2 1/4 cups water
● 1/4 cup rice vinegar
● 2 tablespoons sugar
● 1 teaspoon salt

Equipment:

● Rice cooker or a heavy-bottomed pot with a lid
● Wooden or plastic sushi rice paddle
● A large, non-metallic bowl (wooden or glass)

Instructions:

  1. Rinse the Rice:

● Place the sushi rice in a fine-mesh strainer and rinse
it under cold running water until the water runs clear.
This removes excess starch and prevents the rice
from becoming too sticky.

  1. Cook the Rice:

● If using a rice cooker:
● Add the rinsed rice and water to the rice cooker.
● Follow the rice cooker’s instructions for cooking sushi
rice.
● If using a pot:
● Add the rinsed rice and water to a heavy-bottomed
pot with a tight-fitting lid.
● Bring the water to a boil over high heat.
● Once boiling, reduce the heat to low and cover the pot
with the lid.

● Simmer for about 15-20 minutes or until the water is
absorbed and the rice is tender.

  1. Prepare the Seasoned Vinegar:

● While the rice is cooking, combine the rice vinegar,
sugar, and salt in a small saucepan.
● Heat the mixture over low heat, stirring until the sugar
and salt completely dissolve.
● Remove it from the heat and allow it to cool to room
temperature.

  1. Season the Rice:

● Once the rice is cooked, transfer it to a large,
non-metallic bowl while it’s still hot.
● Gradually pour the seasoned vinegar mixture over the
hot rice.
● Use a wooden or plastic sushi rice paddle to gently
fold and mix the vinegar into the rice. Use a cutting
motion to avoid smashing the rice grains.
● Continue folding and mixing until the rice is evenly
coated with the seasoned vinegar. This process is
called “shining” the rice.

  1. Cool the Rice:

● Allow the seasoned rice to cool to room temperature.
Use a fan or gently wave a fan over the rice to help
cool it more quickly if you like.

  1. Use the Sushi Rice:

● Your sushi rice is now ready to use for making sushi
rolls, nigiri, or sashimi bowls. Be sure to use it while
it’s still slightly warm or at room temperature for the
best results.
